I think my dear friend Caitlin has outdone herself this time. When I asked her to come up with something for Valentines day, I couldn’t have imagined that something that looked *this* mouth watering would land in my inbox–Oh.my.gosh. Right? And she managed to make something that doesn’t look cheesy, too–not so easy to do when it comes to Valentines day. I love the idea of this heart-shaped hand pie for Valentines Day (or everyday, really!) And without further ado, here’s Caitlin’s first recipe for us for 2103! Take it away, Caits!:
What better way to say I love you to your sweetie pie!? These hand-pies are super duper easy to make and say I love you in the sweetest way!
4 cups Strawberries
1 teaspoon Cornstarch
1 teaspoon Vanilla
3 tablespoons Vanilla sugar
Juice of half a lemon
Zest of half a lemon
Pie dough (homemade or store bought)
One egg
Decorating sugar
Preheat oven to 400. Roll out pie dough to 1/4 inch thick. Wash strawberries and quarter. Mix berries with vanilla, lemon zest, lemon juice, sugar, and cornstarch. Cut dough into heart shape using paper template. Beat egg. Place berries on the center of heart, using your finger put egg on edge of pastry. Place another heart on top of the berries and seal and crimp edges together using a fork. Brush hearts with egg and sprinkle with decorating sugar. Bake on a parchment covered pan until golden brown, approximately 15 minuets. Serve with fresh whipped cream.

Thanks for sharing this… my kids love special sweets and I love to makes them things that they come home from school and find waiting. This is definitely doable and sooo cute!
My husband doesn’t like strawberries…too many seeds…go figure! Anyway I could use canned cherry pie filling and make these in a snap. He would love them.
This is just absolutely lovely! I wish I had found this recipe in time for Valentine’s Day. Instead of strawberries, I might try blueberries, or maybe I will add a little bit of cream cheese inside with the strawberries. But gosh they look delicious on their own!
