I was wondering about veggie bbq ideas for my birthday bbq next week and so I asked the most inventive chef I know, my mom.
Her answer was so mouth watering and inspiring– I had to share.
Uh oh folks I think I might be turning into a foodie.
From my mom: “BBQ aubergine, zuchetti & portobellos might be my favorite. BBQ in any case (plus roasted corn in the coals with lemon butter & chili)—the veggies, as main course, could be cut thicker than usual, marinated lightly, and then served with somebody’s dipping sauces (we’ve been doing indian/south asiain lately, chunky.)
My favorite spring summer salad last summer was nectarines & red peppers in lime w/ coriander & cumin, graced with mint leaves or cilantro. A 3 grain & lentil salad is a nice side dish—like tabouli, with chopped cucumbers & tomatoes, dill & menta. “
