I have been spending a lot of time in the country the last few weeks, and there is nothing better than a neighborhood farm stand–they have the most incredible heirloom tomatoes and fresh corn on the cob which inspired this effortless salad. Every time I serve this to friends they go crazy and sing my praises. The truth of the matter is, the tomatoes are the star of the show! As usual this amazing salad can be made in a matter of minutes and never disappoints.
What you will need:
-Farm fresh heirloom tomatoes in a variety of colors
-One ear of fresh corn
-Fresh sprig of tarragon
-Sea salt –
Olive oil
-Red wine vinegar
What you will need to do:
Cut raw corn off of the cob. Cut tomatoes into large wedges and arrange according to color. Sprinkle corn on top of tomatoes followed by a few leaves of tarragon. Dress with olive oil, vinegar, and salt. There is no way anything could be easier!
