At times I love to make things out of food just for the fun of it or to challenge myself to think outside the box. This was such and occasion, it was actually Justina who must of been having one of those weird pregnancy cravings! She asked for fruit–yes fruit–sushi!! While researching for this project I found lots of fruit sushi out there, along with other weird permutations made out of fruit rolls, fruit candy, and just about anything else you could imagine, but none of it looked very real to me. I wanted to make something that at first glance could be mistaken for the real deal, so here it is…. As usual this was super easy, made in less than four steps, and only from things I had on hand in the kitchen.
I made my rice by using coconut milk instead of water, 1 cup rice 2 cups liquid, along with a handful of coconut flakes. I let the rice cool slightly and then shaped it.
Next I used very thin slices of grapefruit and plum to top it off. The scallions on top of my “hamachi” are very thin slices of kiwi, which also was the star ingredient for my “wasabi”. The pickled ginger is made of melon.
There you have it Justina…Fruit sushi!

love it! we actually have sushi with mango and mango ceviche in colombia and its amazing.
