Y’all know I’m no food blogger, but every now again, I concoct a little something that’s so tasty, I have to share. Yesterday I made a salad that was seriously the most refreshing salad I’ve EVER had…so here’s the simple recipe in case you’d like to give it a try:
Throw together:
Arugula
Sliced radishes
Snow peas
Sliced watermelon cubes
Sliced avocado cubes
Sprinkle on some feta cheese and a bit of black pepper
Mix together:Juice from one lime
2 Tbsp. balsamic Vinegar
Toss it together.
The avocado and the cheese give it enough oil that I didn’t even add olive oil to the dressing–and this salad was so delish and refreshing–perfect for a light summer meal. Bon apetito!

This looks delicious! The ingredients for the dressing made my mouth water. I love the fact that the texture of the cheese and the avocado elinated the need for oil. Thank you for sharing your commitment to healthy eating.

OK I just made this last night and you were not joking. It was the perfect dish for a hot & humid NYC summer night. I subbed chopped raw green beans for snow peas because that’s what I had from the farmers market. It was amazing.
