Full disclosure-I can’t take credit for the inception of this recipe. In my former life, I ran a rad coffee shop in Seattle and this sandwich was my absolute favorite from our tiny menu. I’ve since made it my own, and because everyone I make it for loves it, I figured I’d share it with you!
Spicy & Sweet Apple Grilled Cheese
Prep Time: 15 minutes
Serves: 2
Ingredients:
4 slices good bread
1-2 Tbsp butter, softened
6 oz sharp cheddar cheese, preferably an aged variety
1/2 an apple- any tart, crisp variety will work, I used a Pink Lady
2 tsp honey
Black pepper, coarsely ground
1 cup arugula
Directions:
Slice cheese and apple thinly. Butter one side of bread slices.
Place 2 slices of buttered bread on griddle, or skillet, buttered side down. Layer sliced cheese on bread, followed by sliced apple. Drizzle honey over apple slices. Sprinkle cracked pepper on top. Place a second layer of sliced cheese over apple layer. Top with remaining slice of buttered bread.
Grill sandwiches over med heat for 5-10 minutes, flipping halfway through, until bread is golden brown.
Remove sandwiches from griddle. Gently pull top slice of bread up and add a layer of arugula, then replace bread. Slice in half. Devour.
The spicy bite of the black pepper and arugula, contrasted with the sweetness of the apple and honey makes every bite of this sandwich complex perfection. Whip up a few this weekend- I think it’ll become a favorite for you too!

The waist has actually consistently been a target, from the
shapely figure to the wasp waist to the easy need to
earn the belly show up standard, the bodice in its lots of forms
will possibly never fully disappear from our closet.

OMG! It was absolutely delicious! I had to omit the arugula because I couldn’t find any(Upton,MA) but my husband and I loved it…we paired it with Sam Adams’ Cherry Wheat Beer ❤️
